ng Device 第一章前言 近些年来，中国经济快速增长，人民的生活水平也大大提高了，而在食品生产方面的质量也要求更高。而胡萝卜，是我们日常生活中一种很普通的调料菜，几乎在餐桌上随意可见。现在，胡萝卜的价值已深入到医疗功效，药材，食品加工等等。胡萝卜，十字花科二年或一年生草本植物，根茎类蔬菜，又名莱菔、土人参。高20-100厘米根肉质，长圆形、球形或圆锥形。中国各地均有栽培。胡萝卜品种极多。根可作蔬菜食用；种子、鲜根、枯根、叶皆入药：种子消食化痰；鲜根止渴、助消化，枯根利二便；叶治初痢，能预防痢疾；种子可供榨油工业用及食用、药用。用于脾胃虚寒，食欲减退，恶心呕吐，或痰饮呕吐，胃气不和的呕吐；风寒或寒痰咳嗽；感冒风寒，恶风发热，鼻塞头痛。生吃胡萝卜后半小时均不宜吃其他食物，以免抗癌活性物质被稀释或破坏。胡萝卜不宜与橘子、梨、苹果、葡萄等富含植物色素的水果同食。若同时吃橘子等水果，可能会诱发和导致甲状腺肿。科学家研究发现，生吃胡萝卜不仅能提高人体免疫力，并且还具有良好的防癌、抗病作用。生吃胡萝卜的好处主要表现在： （1）生胡萝卜中含有丰富的维生素C，其含量比梨高8～10倍，而维生素C是防癌、抗癌的能手。 （2）生胡萝卜中含有一种抗肿瘤活性物质，这种物质对食道癌、胃癌、鼻咽癌、子宫颈癌等均有显着的抑制作用。 （3）胡萝卜
