马铃薯去皮机的设计 摘要 自农业部提出马铃薯主粮化战略后,马铃薯产业化发展得到了各个食品加工产商的重视,许多加工产商依赖现有的技术,能够以各种方式加工各类马铃薯制品。马铃薯现面临生产面积和产量不断增加,供过于求的现状,造成这种状况主要原因之一是:大部分马铃薯还是以鲜食为主,加工产品单一,加工技术有待进一步的提高[1]。实现马铃薯的理想去皮是推动马铃薯深加工发展的重要一步,马铃薯理想的去皮是指只去除掉马铃薯最外层薄薄的一层皮,但目前现有的去皮方式很难达到这一步。不同的马铃薯制成品对马铃薯去皮程度的要求也不一,导致我们所使用的去皮方式也不一样,有的情况是要求马铃薯去皮后不能够看到任何芽眼,表皮应该要整洁;有的对去皮后产品外表无要求。现有的去皮方式主要包括蒸汽去皮、碱性溶液去皮、摩擦去皮、人工去皮。 本主要详细介绍和探讨了马铃薯的各种去皮方式,通过对几种去皮方式进行优缺点的对比(如对其去皮效率、去皮机的适用性、机器成本和对制成品的影响),选择一种合适的去皮方式,设计一种适合小型食堂适用的马铃薯去皮机。 关键词:马铃薯去皮机;马铃薯;摩擦 外文摘要 Desig
